Having originated in Encinitas, Calif., Temaki is expanding a second location, bringing its counter-side made-to-order masterpieces and menu diversity to the Las Vegas Strip’s Proper Eats communal food market. While Temaki is a direct link to the Japanese gambling dens where handrolls first originated over a century ago, no chances are taken with its food and ingredients — Temaki does things the traditional way and the hard way with daily visits to fish markets and local rice farms, ensuring perfect handrolls, sushi rolls and nigiri.
